As much as I love
to make little cute cupcakes, sometimes you just have to raise the bar a little
and try to make some serious birthday cake. That’s what I did this week.
I was asked to
make 2 birthday cakes for 2 different persons. The first one practically lives
at the gym, the second one just loves soccer. These two themes in mind, I was
ready to start my own episode of fabulous cakes!
The first one
is just a red velvet cake coated in sugarpaste and decorated with marzipan
figures (which I entirely made myself).

The second one
is also a red velvet cake, coated in sugarpaste and decorated with marzipan.
But this one has a cream cheese oreo filling (mm.. so good!).

The Red Velvet Cake
- 300 gr_____sugar
- 250 gr_____unsalted butter (room temperature)
- 250 gr_____cake flour
- 25 gr______cornstarch
- 250 ml_____butter milk
- 3__________eggs (separated)
- 1 tbsp_____cacao powder
- 2
tsp______white balsamic cream
- 1
tsp______baking powder
- 1
tsp______vanilla essence
- 4 tbsp_____red food colouring
The Red Velvet Cake
- 250 ml_____butter milk
- 3__________eggs
- 1 tbsp_____cacao powder
- 4 tbsp_____red food colouring
The Cream Cheese Oreo Filling
- 450 gr_____philadelphia
- 225 gr_____icing sugar
- 1 tsp______vanilla essence
- 6 (or more) oreo cookies
- 450 gr_____philadelphia
- 225 gr_____icing sugar
- 1 tsp______vanilla essence
- 6 (or more) oreo cookies
How to?
Preheat your oven at 180°C.

Now let’s
start with the cake batter. Mix the butter with the sugar, then add the egg
yolks and mix again. Put the flour, the cocoa and the cornstarch in another
bowl and mix ½ with the butter mixture. Measure the buttermilk and add the food
coloring, also add ½ to the butter mixture. Now add the other half of the
flower, mix and add the other half of the buttermilk. Now take a fat-free bowl
to whip up your egg whites. Beat the egg whites until soft peaks form and gently
fold them into the batter.
Put the batter in a tin and bake for 40 to
45 minutes. If you want to make a layered cake with filling, only use ½ of the
batter and bake for 20 to 25 minutes.
To fill your cake (and then I mean spread
something between the cake layers) you should start to mix the butter until it’s
soft and smooth. Then add the icing sugar and the vanilla essence and mix. Then
put the oreo’s in a foodprocessor, add the crumbled cookies to the cream cheese
and your done !
You can now start decorating. Be original and create the prettiest cake ever.
