Birthday Baking

Cupcake Wars, The Ultimate Cake Off, Fabulous Cakes,..

I could go on for another 10 minutes, but I think you know where I’m going. Everyone loves these mouth-watering desserts, so why not try to make one yourself?

Behold – my version of the layered red velvet cake in a mascarpone coating !

The Red Velvet Cake
300 gr         sugar
250 gr         unsalted butter (room temperature)
250 gr         cake flour
250 ml        butter milk (less when using liquid butter)
- 3                eggs
- 1 tbsp         cacao powder
- 2 tsp           white balsamic cream
- 1 tsp           baking powder
- seeds from a vanilla bean
- red food colouring

How? Preheat the oven (180°C). Divide the batter over 3 different baking tins (or use the same one for every layer) and put in the oven for 25 minutes. Let the layers cool completely before you start coating, otherwise it will just melt off and the delicious coating will be ruined.

The Mascarpone Coating
240 ml       whipped cream
- 225 gr        mascarpone
- 65 gr          powder sugar
- 1 tsp          vanilla extract

How? Whip your cream to firm peaks in a fat free bowl. Mix the mascarpone with the vanilla and icing sugar in another bowl and put together with the whipped cream. You can also colour your coating with some food colouring.

Decoration
- (Coloured) marzipan and flower-shaped marzipan cutters
- Flags made from paper and taped to skewers
